Sweet Potatoes (Yams)
from the kitchen of Lori E
2 pounds fresh yams to make 3 cups cooked and mashed. Peel, boil, then mash.
Mix with 1/2 cup sugar
2 eggs
1/4 cup softened butter or margarine
1 tsp. vanilla
1/4 tsp. salt
Place in casserole dish and top with mixture of:
1/4 cup melted butter
1/2 cup brown sugar
1/4 cup flour
1/2 cup chopped pecans
Bake uncovered 350° for about 30 minutes.
