Hamburger Rice Pie
from Wilma Renfro Wilson 1960
1 lb Hamburger - 1 lb
1/2 cup crushed crackers - 1/2 cup
1/4 cup chopped onions - 1/4 cup
1/4 cup chopped green pepper - 1/4 cup
1/2 cup grated cheese - 1/2 cup
salt - 1 1/2 tsp
fresh ground pepper - 1/4 tsp
tomato sauce - 2 cans 16 oz
Cooked Rice (white or brown) - 3 cups
Mix hamburger, crackers, onions, green peppers, seasonings, and 1/2 can tomato sauce. Spread in greased pie pan, pushing mixture on sides of pan to form and edge. Mix Rice, cheese, and remaining sauce. Place in meat shell.
Bake in 350º oven for 30-35 minutes or until meat is done.
